This past year Waite has challenged herself to bake more often and when she does to try out new and different recipes then her normal ones. It was such a fun challenge especially when paying attention to seasonal fruit and ingredients.
There were a couple recipes that we won’t try again, one that we need a bit more practice before we try again but many stellar ones that we will be adding into our rotation. And since we loved them, we thought we would share them with you!
1. Ballymaloe Fresh Spinach Soup
We’ve already made this recipe multiple times and I think it gets better and better each time!
We were really in a green soup phase and this one was another great one!
3. Gluten-Free Gingerbread Muffins
Gingerbread flavored anything is a favorite around here and these muffins are the perfect taste and consistency.
4. Gluten-Free Pumpkin Muffins
We made these multiple times and couldn’t get enough of them! So delicious warmed up with butter.
5. One Bowl Zucchini Muffins
At the end of summer, we had so many zucchinis that we had to find as many recipes to use them up as possible — this one was a hit!
6. Gluten-Free Strawberry Rhubarb Crisp
Matthew loves rhubarb so I’m always trying to find new ways to enjoy it in the early summer. He loved this!
7. Gluten-Free Strawberry Icebox Cake
This was my favorite thing we made this year! It was so easy, so delicious and something like we’ve never had before!
8. Easy Chocolate Chip Scones
During the early spring when we came in from gardening, these were eaten quickly with the cups of teas to warm us up.
9. Victoria Sandwich with Buttercream
A British classic that warmed us up during the winter when all we wanted were summer fruits and warm breezes.
10. Gluten-Free Gingerbread Cookies
We made these for Christmas last year and the texture and taste were amazing for gluten free! We will be making them again this year!
